GREEK BEEF AND MUSHROOM ORZO

Greek-Beef-and-Mushroom-Orzo-OR

2 Tbsp vegetable oil
1 pound sirloin tip steak, cut into this strips
1 pound fresh mushrooms, sliced
1 garlic clove, minced
28 oz can diced tomatoes
14 1/2 oz can chicken broth
1/2 c water
1/4 tsp dried basil (fresh is always better!)
8 oz orzo pasta
2/3 cup crumbled feta cheese

Heat oil in a large skillet over high heat. Add steak and brown 5 minutes. Add mushrooms and cook 5 minutes more. Add next 6 ingredients and bring to boil. Reduce heat to low, cover and simmer 10 minutes. Stir in cheese and serve.

  1. I tried this recipe the other night. I tend to prefer bolder flavors so I would suggest adding oregano along with the basil and near the end of the cooking process add some chopped Kalamata olives. That would really enhance that “Greek” flavor
