This Chicken Salad has crushed pineapple in it so you have a moist salad without adding so much Mayo.
1 pound chicken breasts
8 oz can crushed pineapple with the juice
1/2-1 cup Mayonnaise
30 seedless red grapes
3 ribs of celery, diced
1/2 cup walnuts, chopped
Grill Chicken breasts outdoors, cool and cut into bite size pieces. Mix together all ingredients plus salt and pepper, if desired, to taste. Make a day ahead and refrigerate. Serve over a bed of baby spinach with fresh fruit that is in season.
I also served with whole wheat pita wedges.
